Mountain vineyards (800-900m) surrounding the Mega Spileo vineyard.

Winemaking

The grapes are pressed and gently transferred to new, 400lt oak barrels for alcoholic fermentation together with their marc. Approximately a week post-alcoholic fermentation, the free-run wine is separated from the grape solids, the barrels are closed and the wine is taken back to the same barrels. It remains there for 16 months where malolactic fermentation is completed and the wine matures and evolves naturally. The wine is then carefully removed from the barrels and bottled without the use of oenological additives or filtration. The wine remains in the bottle for at least another 24 months to develop its complex and mature nature.

Character

Light orange with brown hues. Dried white flowers on the nose, together with notes of spice, botanical minerals and hints of toastiness.Fresh and elegant in the mouth, with rounded tannins and acidity that lend it structure, complexity and make it ideal for ageing. Long and cool finish.

Ideal with

Fatty fish, meats with creamy or white sauces, ripe cheeses

Careful transfer of the wine to a decanter before serving is recommended, to avoid sediments and allow the flavour profile to better express itself.

This is a natural wine, produced completely without additions or filtering.
