Varietal Composition
Malagousia 60%, Assyrtiko 20%, Chardonnay 20%
Vineyard
Mountain vineyards in the Trapeza and Vrosthena regions, at an altitude of 800-900m. Harvest takes place in early September. Find out more
Winemaking
Separate vinification of each variety. Fermentation of both the Malagousia and Assyrtiko in small tanks at low temperatures. Maturation with the wine lees for about 3 months. The Chardonnay ferments in new 225-litre barrels and is left to mature for 6 to 7 months. Final mixing and storing in stainless tanks for 3 weeks.
Flavour profile
Straw yellow colour with green hues. Expressive nose with complex aromas and notes of peach, white flowers, basil and thyme. Balanced, fruity palate with cool acidity. The finish has a long “vanilla” after-taste.
Ageing
Enjoyable both newly bottled and suitable for ageing up to three years.
Pairing
Seafood, fish, white meats with mild sauces, pasta.
